The number 1 Dutch snack is now available for the fast-growing number of flexitarians and vegetarians. Smilde Bakery, in collaboration with the world’s first Vegetarian Butcher, introduced the vegetarian sausage roll. The Vegetarian Butcher stands out with a new generation of meat substitutes that, according to professional chefs and culinary reporters, cannot be distinguished from the real thing. A taste panel assessed the sausage roll with a score of 8,5 in a taste test with sausage rolls that included real meat. Our vegetarian sausage roll thus became the most highly rated! The sausage roll is made from farmhouse butter and the puffiest of puff pastry, with a delicious legume filling.
The Vegetarian Butcher
The Vegetarian Butcher stands out with a new generation of meat and fish substitutes that, according to professional chefs and culinary reporters, cannot be distinguished from the real thing. Ferran Adria (El Bulli) believed she was given a chicken thigh of exceptional quality and Mark Bittman, a food journalist of The New York Times, was full of praise. The Independent headed: “Is this the end of meat?” The Vegetarian Butcher is the brain child of Jaap Korteweg. Korteweg is a 9th generation farmer and became a vegetarian during the classical swine fever epidemic. He decided to develop meat substitutes with a taste, bite and structure that cannot be distinguished from real meat. In just five years, the concept has grown from one outlet in The Hague to over 2.600 outlets spread across the Netherlands, Belgium, Portugal, Spain and Norway via independent fresh food specialists, natural stores and supermarkets including Jumbo, Albert Heijn, Coop, Delhaize and EkoPlaza.
