Macaroon puff-pastry shells

Ingredients

  • Semi-finished PruvĂ© puff-pastry shells
  • Macaroon bavarois
  • Apple and raisin compote (2)
  • Macaroon pieces
  • Apple chips (1)
  • Chocolate glaze

Method

Coat interior of shell with chocolate. Pipe the macaroon bavarois filling around the edge of the shell. Place the apple and raisin compote in the centre. Garnish with apple chips.

(1) Apple chips: dip slices of apples in sugared water and oven-dry on a low heat.

(2) On a low heat, gently melt butter, sugar and cinnamon together in a saucepan. Add pieces of apple, raisins and a little Calvados to this. Simmer until cooked, and then add a little cold thickening agent.
